Enchilada Espinaca

Spinach sautéed with mushrooms, onions, tomatoes, cilantro and jalapeños rolled into two corn tortillas smothered with our suiza sauce and topped with Monterey Jack cheese served with white rice, rancho or black (cholesterol free) beans and sour cream.
